Well, it seems like the December holiday candy was just here, but what do you know… here comes the Valentine’s Day treats!
As a mom, I’m always looking for ways to balance the fun of the holiday, the excessive sweets, and getting some healthy options in my child.
These Chocolate Dipped Strawberries are a favorite with my 3 boys! I feel good about the fruit part and they feel good about the chocolate part, so it’s a WIN-WIN! They make a great treat to bring to a classroom celebration too. It’s a great opportunity to share a healthier option with friends, teachers and other parents since we both know there will be plenty of frosted cookies, cupcakes, candy, lollipops, chips, juice, soda….Need I say more?
- 8 oz. semisweet chocolate chips
- 1 pound fresh strawberries, washed and patted dry
Line a baking sheet with parchment paper.
Place chocolate chips in a double boiler (or if you don’t have one, place a small pot in a larger pot of water filled halfway with water).
Heat water until boiling, then reduce heat to simmer. Place chocolate chips in small pot and place in simmering water.Stir frequently until chocolate is melted and smooth. Remove from heat.
Holding the stem of the strawberry, dip into the chocolate, then lift and twist slightly, letting excess chocolate fall back into the pot. Set strawberry on parchment paper*. Repeat with remaining strawberries.
Set baking sheet in refrigerator for at least 30 minutes to allow chocolate to harden.
*If you don’t want a flat side to the chocolate, you can insert a toothpick in the stem of the strawberry, then place upside down into Styrofoam to cool. This is way too much work for me and my kids don’t care about the flat chocolate side, but just in case there are some perfectionists out there…
